STARTER
Saint Jacques scallop pearls, glazed in coconut butter with lime leaves and maple syrup, accompanied by mint- and licorice-infused pea mousse, guacamole cream, lime and pomegranate caviar, served on a salt meringue with a delicate avocado salsa.
MAIN COURSE
Glazed turbot praline, bathed in aromatic butter with Provençal herbs and lemongrass, served with agata fondant potatoes, black truffle asparagus, intense lobster bisque cream, and a delicate prosecco emulsion with subtle notes of yuzu and mango.
DESSERT
White chocolate brownie with salted caramel ganache and mango sorbet – a perfect finale, with contrasting textures and bright, vibrant flavors.
